| 1 lb. can | pink salmon | | 2 | eggs, beaten | | 1/4 cup | milk | | 1/2 tsp. | salt | | pinch | Pepper | | 1/2 cup | fine saltine cracker crumbs (12 crackers) | | diced onion |
| | Drain salmon, reserving liquid to use in place of milk. Beat eggs, add cracker crumbs, onion, salmon, salmon liquid, seasonings. Divide into 4 -6 patties (sort of spoon into hand, shape and drop onto oil). Fry on each side until golden brown and set - about 10 minutes per side. |
